Baked bream fish recipe
In general, I love fish and I eat various kind of it. However, my partner does not like it so much. One day we were at a market in a small village in France and there was a very nice stand selling fish. I suddenly thought to cook one for dinner and bream fish is quite light in taste and even my partner liked it. This recipe was enough for 2 people for one meal.
Ingredients
- 1 sea bream fish per person
- 1/2 lemon per fish
- 4/5 leaves of sage per fish
- Rosemary
- Salt
- Pepper
For the sauce
- 200 gr natural yogurt
- Juice of 1/2 lemon
- Salt
- Pepper
Process:
- The first step would be to clean the fish. If you are confident enough you can clean it by yourself following these steps. Otherwise, you can ask the seller to clean it. They usually provide this service.
- To clean the fish you can first take a knife from the side where there is no blade and pass it onto the skin of the fish. In this way, you will remove the scales from the skin.
- Once this passage is done, you can take a pair of scissors and cut the “belly of the fish”. Usually, on the lower part of the fish there is a small opening already. Start from that point and cut until the mouth.
- Now, remove the interior part of the fish and clean with water.
- At this point the fish is cleaned. Take the lemon and cut it into slices around 2/3 millimetres. Place it in the open cut on the lower part of the fish.
- Now you can insert in this cut also the sage, the salt, the pepper and the rosemary Image 1.
- Now wrap the fish into aluminium foil. Place it into a baking tray and bake it at 180°C degrees for at least 30 min. The fish will be cooked once the eyes turn into a white colour.
- While the fish is baking, you can prepare a light sauce. Place the yogurt into a bowl and mix it with the lemon juice, pepper and salt.
- Once the fish is done, you can remove the skin and bones. You should use a very sharp and flat knife and possibly watch some videos to clean it right.
- Serve it with the yogurt sauce and enjoy the light fish meal :)
Variants:
- One of the variants I like is to prepare a small sauce with cherry tomatoes. I take around 300gr of cherry tomatoes some herbs like fresh basil (if available) or oregano, herbs de province. I cut the cherry tomatoes in half and I cook them on the stove for 10 min until their water creates a nice sauce. Once the fish is baked, I clean it and put this sauce on top instead of the yogurt.
