Carrot Bread

An exquisite alternative to normal bread

Are you tired of the same bread? Do you like carrots? If one of the answers is yes then you can try this gluten free carrot bread. You can eat it in slices or use it as a sandwich, but it is super delicious also by itself.


Ingredients

  • 180 gr of carrots (roughly 3 carrots)
  • 2 eggs
  • 40 gr of almonds
  • Salt
  • Curcuma
  • Pepper

Process:

  1. Start by grating the carrots in a bowl. You can use an electric blender or a manual one as you can see in Image 1. If you use the manual one, pay attention not to grate your fingers ;-)
  2. Now add the eggs and the almond flour to the bowl. You can include the salt and the spices too Image 2.
  3. Mix all the ingredients together with a spatula until they are well blended. I suggest not to use an automatic mixer/blender for this step because you may end up with a cream which may be too liquid for the purpose of this recipe Image 3.
  4. Once the ingredients are mixed, take a rectangular baking shape and put a sheet of baking paper. Pour the mixture inside.
  5. Bake it at 180° for 30-45 min depending on the consistency of the dough and the amount of water contained in the carrots. It may also take longer. Image 4
  6. Once baked, you can either use it for sandwiches, meaning cut it in the middle and fill it up with the ingredients you like or cut it in slices.

Variants:

  • As in all recipes, you can substitute the curcuma and the pepper with whatever other spices you like. You may also replace the almond flour with other flour types, but be aware that the consistency may vary as different type of flours absorb water in a different way.
  • You can also try to turn this savoury bread into a sweet one by replacing the salt with sugar.
