Cheesecake

A high protein cheesecake

This cake requires few ingredients ad after the baking time it will be perfect for a fresh dessert. This cheesecake also contains high protein thanks to the high protein yogurt used as ingredient.


Ingredients (20 cm baking shape)

  • 200 gr biscuits
  • 1 small espresso cup of water
  • 50 gr butter
  • 480 gr vanilla high protein yogurt
  • 2 eggs
  • 2 table spoon sour cherry jam
  • Cherry jam

Process:

  1. Start by cracking into crumbles the biscuits. You can either use an electrical blender or baking paper and rolling pin as I did. Place them in a bowl once they are all reduced to crumbles. Image 1, 2, 3 and 4
  2. Once all the biscuits are crumbles, weigh the butter and melt it in a cup. I used the microwave for 30 seconds. Image 5 and 6
  3. Proceed by mixing the butter, water and biscuits in the bowl until well blended. Image 7
  4. Put the biscuit mixture in the baking shape (20 cm). This will be the base of the cheesecake. Image 8
  5. Now proceed with whisking the egg in another bowl with the manual whisk. Image 9
  6. Add the protein yogurt until the egg and the yogurt are well blended together. Image 10
  7. Now you can pour the yogurt mixture in the baking shape where you previously laid the crumble mixture.
  8. Bake at 180° for 60 min at oven static setting. Image 11
  9. Let the cake rest in the fridge for at least 2 hours.
  10. Once the cheesecake has rested, add a layer of jam on top and it is ready to be served. Image 12 and 13

Variants:

  • The flavour of the cheesecake can vary based on the type of protein yogurt used. Instead of Vanilla, it could be Chocolate or coconut.
  • The cherry jam can be replaced by a protein cream (e.g., chocolate, pistachios) or another flavour jam.
