A high protein cheesecake
This cake requires few ingredients ad after the baking time it will be perfect for a fresh dessert. This cheesecake also contains high protein thanks to the high protein yogurt used as ingredient.
Ingredients (20 cm baking shape)
- 200 gr biscuits
- 1 small espresso cup of water
- 50 gr butter
- 480 gr vanilla high protein yogurt
- 2 eggs
- 2 table spoon sour cherry jam
- Cherry jam
Process:
- Start by cracking into crumbles the biscuits. You can either use an electrical blender or baking paper and rolling pin as I did. Place them in a bowl once they are all reduced to crumbles. Image 1, 2, 3 and 4
- Once all the biscuits are crumbles, weigh the butter and melt it in a cup. I used the microwave for 30 seconds. Image 5 and 6
- Proceed by mixing the butter, water and biscuits in the bowl until well blended. Image 7
- Put the biscuit mixture in the baking shape (20 cm). This will be the base of the cheesecake. Image 8
- Now proceed with whisking the egg in another bowl with the manual whisk. Image 9
- Add the protein yogurt until the egg and the yogurt are well blended together. Image 10
- Now you can pour the yogurt mixture in the baking shape where you previously laid the crumble mixture.
- Bake at 180° for 60 min at oven static setting. Image 11
- Let the cake rest in the fridge for at least 2 hours.
- Once the cheesecake has rested, add a layer of jam on top and it is ready to be served. Image 12 and 13
Variants:
- The flavour of the cheesecake can vary based on the type of protein yogurt used. Instead of Vanilla, it could be Chocolate or coconut.
- The cherry jam can be replaced by a protein cream (e.g., chocolate, pistachios) or another flavour jam.
