A French inspired recipe
This cake is perfect for all summer fruits or berries. I tried it once with fresh hand-picked cherries and the other time with cherries and current. However, it can be prepared also with apricots, peaches or berries.
Ingredients for one rectangular baking shape
- 1400 gr cherries
- 6 eggs
- 200 gr sugar
- 400 gr milk
- 180 gr flour
- 40 gr brandy/Rhum
- Vanilla extract
- One pinch of salt
Process:
- First step is to wash the cherries and remove the stone. For this step you can either use a stone remover or a knife. Once finished let them on the side.
- Now you can beat the eggs together with the sugar. You can use an electric whisk and keep whisking until the mixture double in size and reaches a foamy consistency.
- Add salt, vanilla extract and the flour. For this step you can use a sieve to evenly distribute the flour without crumbs and whisk at a low speed.
- Once the mixture is well blended, proceeds with adding milk, Brandy/Rhum and whisk by hand.
- Take a tray and lay the cherries without the stone evenly on the surface.
- Pour the mixture on top.
- Bake for 40/45 min at 180° degrees.
- Serve with icing sugar on top or whipped cream on the side.
Tips:
- When whisking the eggs with the sugar, make sure to use an electric whisk and when add the milk and the Brandy/Rhum use a normal hand whisk.
