Alternative and gluten-free piadina
The central regions of Italy are very famous for flatbreads called “piadina” filled with cold cuts, cheese as well as grilled vegetables. The original recipe is done with white flour, but I found this gluten-free alternative very tasty.
Ingredients for the dough (for 8/9 15 cm piadinas)
- 200 gr Chickpeas flour
- 25 gr seed oil
- 355 gr water
- 1/2 teaspoon of salt
Process:
- Pour the flour and the salt in a bowl and mix with a fork.
- Add the water and mix with a whisk.
- You will need to mix until obtaining a smooth mixture Image 1.
- Add the oil and mix another time until all oil is mixed with the rest of the mixture.
- Take one scoop of the mixture and pour in a 20cm pad previously heated or a crêpes maker.
- Let the piadina cook until it forms bubble and then flip it Image 2.
- Continue with points 5 and 6 until you finish the mixture.
- You can fill the piadinas with your favorites ingredients e.g., cream cheese, salmon, arugula, avocado, cucumber Image 3.
Tips:
- I would suggest to use the crêpes maker as it is built for that and it is non-stick.

- 1 bowl
- 1 fork
- kitchen ladle
- non-stick pan or a crêpes maker
