Gluten & Lactose free coconut muffins

If you’re looking for a quick and wholesome treat that’s both lactose-free and gluten-free, these coconut muffins are your go-to. They’re soft, naturally packed with proteins, and bursting with coconut flavour. Plus, they come together in no time with just a few ingredients and basic kitchen tools. These muffins are perfect for a cosy breakfast, a snack on the go, or a light dessert.


Ingredients

  • 120 gr yogurt Lactose free
  • 100 gr coconut rape
  • 2 eggs
  • 1 vanilla sugar pack

Process:

  1. Preheat your oven to 180°C.
  2. In a bowl, mix the yogurt until smooth Image 2.
  3. Add the eggs and vanilla sugar, and whisk until well combined Image 2.
  4. Add in the coconut rape Image 2.
  5. Spoon the mixture into your muffin moulds Image 3.
  6. Bake for 12–15 minutes, or until golden and a toothpick comes out clean. Let them cool slightly before enjoying!
