Lactose free pizza style eggplant
If you are craving a quick and tasty meal, but you are short on time try this microwave aubergine recipe with pesto, tomato, and mozzarella. With just a few ingredients and minimal prep, you can enjoy a delicious healthy dish. Perfect for busy weeknights or any occasion.
Ingredients for 2 people
- 2 big long shaped aubergine
- 125 gr lactose free mozzarella
- 200gr tomato sauce
- 2 table spoon pesto (optional)
Process:
- Start by washing the aubergines thoroughly and cutting off the edges. Image 1 & 2
- Make several cuts on the center part of the aubergines to help them cook evenly.
- Place the prepared aubergines in a microwave-safe dish and cook on high for 10-15 minutes, or until they become tender.
- While the aubergines are cooking, cut the mozzarella into small pieces.
- Once the aubergines are cooked, remove them from the microwave and add a generous layer of pesto on top (if using).
- Pour the tomato sauce over the aubergines and then add the cut mozzarella pieces. Image 3 & 4
- Return the dish to the microwave and cook for an additional 2 minutes, or until the cheese is melted.
- If desired, garnish with fresh basil before serving.

Tips:
- Sometimes, aubergines can have a pungent taste. To mitigate this, apply coarse salt to the cut aubergine and let it rest for at least 30 minutes before cooking it. This process will extract some of the water from the aubergine, thereby removing the pungent taste.Image 6
