Focaccine (small Focaccia)

Fast recipe for small focaccia

Do you like Italian Focaccia, but you don’t have time to cook it the proper way? Try out this recipe for a fast and tasty finger food suitable for a party or a dinner with friends.


Ingredients for the dough:

  • 250 gr white flour
  • 160 ml lukewarm water
  • 20 ml of oil
  • 10 gr of salt
  • Fresh or dried Thyme (as much as you like)
  • 1 package of instant yeast

Ingredients for the filling:

  • 4/5 slices of ham
  • 4/5 slices of Mozzarella

Process:

  1. First of all, proceed with pouring in a glass 160ml of lukewarm water and mix it with the instant yeast until the two ingredients are melted together.
  2. Then take a bowl and mix the flour with the salt. Add the thyme and the other spices that you chose Image 1.
  3. Now add the oil and the water to the flour bowl and mix everything together until it reaches a non-sticky consistency. You may need to add flour in order to reach the right consistency.
  4. Divide the dough into 8-10 small balls. Subsequently, flat them with the help of a rolling pin. Make sure to have an even number of balls because you will need two of them for preparing one small focaccia Image 2.
  5. Take half of the dough balls already flattened and position a slice of mozzarella and one slice of ham on them Image 3. Note that you might need to cut the ham in smaller pieces depending on the size of the original slices. Then take the other half of the flattened dough balls and place them on the top of the filled layers. Make sure to close the edges together very well to prevent the filling to exit when cooking. You can do it with the help of a fork Image 4.
  6. Cook them in a pan on both sides until the dough reaches a golden colour. Usually it takes few minutes per side Image 5. When they are ready, enjoy the focaccine while they are still warm! Image 6


Variants:

  • Instead of the thyme that I used in the dough, curry or curcuma are also very suitable spices for this type of small focaccia.
  • If you are gluten allergic or you want to try out new food, substitute the wheat flour with spelt or rye flour. I used spelt flour and the result was delicious!

Tips:

  • If you don’t have a rolling pin, you can use whatever round object you have at home as for example a water bottle. Just make sure to clean it before using it.
