Thin gingerbread biscuits
Christmas is the most beautiful time of the year. Shops, streets, houses, cafes have a magical atmosphere and there are so many different tasty recipe to light up your mood. Here is a recipe for some gingerbread biscuits with optional filling. However, this recipe can be cooked also during a rainy autumn or spring day.
Ingredients (50 thin pieces)
- 200 gr buckwheat flour
- 50 gr rice flour
- 50 gr oil
- 50 gr honey
- 7 gr baking powder
- 1 apple
- 100 ml milk/vegan milk (the quantity may vary depending on the consistency)
- 3.5 tbsp of ginger
- 3.5 tbsp of cinnamon
- 3.5 tbsp of nutmeg
- 1/2 tbsp of cloves grounded
Optional toppings
- Cherry marmalade
- Chestnuts cream
- Peanut butter
- Lotus Bischof cream
Process:
- After gathering the ingredients Image 1, start by weighting rice flour and buckwheat flour. Mix them in a bowl together with baking powder Image 2. For this step you can use a fork.
- Proceed with measuring the spices and add them to the bowl. Mix all the dry ingredients until well blended Image 3.
- Now you can add oil and honey. Mix all ingredients one more time, always with the help of a fork Image 4 and 5.
- Peel and grate the apple in the bowl Image 6 and 7. Mix the ingredients with the fork until they reach a crumble consistency Image 8. After that you can continue with your hands until you can form a non-sticky dough ball.
- Let the dough rest in the fridge for 30 min Image 9.
- Now it is time to roll out the dough and shape it into biscuits. Cut a piece of dough and roll it out in a thin layer - 5mm high. Please note that you should pour a bit of flour on the surface where you are rolling the dough so that it can be removed easily once shaped into biscuits Image 10.
- Shape the dough with the help of the biscuit shapes and transfer them on a baking tray with baking paper on it. Continue with this step until you finish the dough. Image 11
- Now you can decorate your biscuits. As toppings I used homemade cherry marmalade, chestnuts cream, peanut butter and lotus Bischof cream. I put half a teaspoon on each biscuit.
- Bake for 10/15 min until they reach a golden colour Image 12. You can enjoy them with some warm tea on the side.
