Gluten and Lactose Free chocolate cake with Berry Cream
This gluten-free chocolate cake is rich, indulgent, and perfectly balanced with a creamy berry topping. Whether you’re celebrating or simply craving something sweet, this recipe is a delicious treat worth making!
Ingredients
- 1 egg
- 2 spoons of sugar
- Half mug of seed oil
- 3 tablespoons of cocoa powder
- 4 tablespoons of gluten free flour
- 15 baking powder
- 1 mug of lactose free milk/alternative to milk
For the cream:
- 250 gr of frozen mixed berries
- 1 tablespoon of icing sugar
Process:
- In a large bowl, start by combining all the wet ingredients. Combine the egg, milk, and seed oil. Whisk until well blended Image 1 and 2.
- Now add the dry ingredients. Add the baking powder and sugar to the wet mixture and mix well. Then, add the gluten-free flour and cocoa powder. Stir until you obtain a smooth and creamy mixture.
- Preheat your oven to 180°C. Pour the batter into a greased or lined baking pan. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean Image 3.
- While the cake is baking, prepare the berry cream. In a microwave friendly cup, combine the frozen mixed berries and icing sugar. Cook at medium/high heat for 4/5 min until the berries are soft and the mixture thickens slightly. Let it cool Image 4.
- Once the cake is done, let it cool completely. Spread the berry cream over the top of the cake before serving Image 5.
Once cooled, enjoy it with your favourite toppings for breakfast or as a dessert!
Variants:
Instead of the mixed berries cream, you can also use strawberries or any other fruit you like. It will pair well also with whipped cream.
