Gnocchi alla Romana

An Italian special type of Gnocchi

Gnocchi is a traditional Italian dish usually made out of potatoes. This recipe represents another way of doing them. Instead of using potatoes, it is using Semolina which is a special fine flour with a yellow color.

Ingredients:

For the dough:

  • 250 gr semolina
  • 1 l milk
  • 1 egg yolk
  • Nutmeg

For the toppings:

  • Ham
  • Cheese

The process:

  1. Pour in a pot the milk and let it boil.
  2. Once the boiling temperature has been reached, add the semolina while stirring. The dough should reach a solid consistency.
  3. Let it cook at medium/low heat for another 5 minutes. Then, let it sit for 10 minutes.
  4. Add the egg yolk and stir until it is incorporated with the rest of the dough.
  5. Afterwards, put the dough in a plane baking tray and let it sit over night or for at least 12 hours in the fridge.
  6. After the rest hours, cut the dough in small squares and position them in the baking tray. Add cheese and Ham on top.
  7. Cook for 20 minutes in the oven at 160°C until the top part become golden color.

Variants for filling:

  • As a topping you could also use tomato sauce or pesto and cheese. You can use whichever ingredients you like the most.
