Ice-cream cake

A refreshing cake

Valentine’s day is approaching and maybe you are looking for an amazing and fresh cake. Well, this recipe may be what you are looking for. If you have a heart shaped baking tray, even better! I assure you, you will make your Valentine very happy.


Ingredients

  • 1 l of vanilla ice cream (preferably a cube)
  • 100 gr Nutella
  • 200 gr dark chocolate
  • 150 ml non-whipped cream

Ingredients for the dough

  • 100 gr biscuits
  • 125 gr butter

Process:

  1. We will start the process by preparing the base for our ice-cream cake. Crumble the biscuits into small pieces without fully mash them into powder. You can either do it by hand with the help of some baking paper and a glass or a fork or with the electrical blender. Once the biscuits are mashed, put them in a bowl.
  2. Now, melt the butter and mix it with the biscuits.
  3. Use half of the mixture to form the base of the cake. Firmly press the mixture to the bottom of the baking shape and keep the rest of the mixture in the bowl.
  4. Now proceed with preparing the cream part of the cake Image 1. Slightly warm up the Nutella either by putting it in the microwave or by place it in a pot of warm water. Once it is warmed up, spread it on the biscuits base inside the baking shape.
  5. Slice the ice-cream into 1-2cm wide pieces and lay them on the cake until they form an even layer. After having applied the ice-cream, put the rest in the freezer so that it will not melt away Image 2.
  6. Melt the dark chocolate and whipped cream together, and apply half of it on top of the ice-cream layer of the cake Image 3 and Image 4.
  7. Put the cake in the freezer to let it chill for 10-15 minutes.
  8. Repeat steps 3-7 until you finish all the ingredients Image 5 and Image 6.
  9. Once you finished all the ingredients and build all the layers, put the cake in the freezer and let it rest for at least 4 hours. Before serving it you can still decorate the cake with some topping as for example hazelnut crumbs Image 7.

Variants:

  • If you do not like using vanilla ice-cream, no problem! You can use any flavour you like, or you think goes well with chocolate for example mint or strawberry.
  • You can also substitute the hazelnut topping with any other topping you may like.
