Lactose & Gluten-Free Yogurt Bread
This lactose- and gluten-free bread offers an alternative suitable for a variety of dietary needs. It is ideal for breakfast or as a side of main meals. The recipe is straightforward and requires minimal preparation, making it a practical choice for everyday baking.
Ingredients
- 600 gr lactose-free yogurt (3.8% fat)
- 3 eggs
- 325 gr oats
- 100 gr seed mix (pumpkin, sunflower, flax)
- 50 gr nuts
- ½ packet baking powder
- Salt, to taste
Process:
- Preheat the oven to 180°C (356°F).
- Mix wet ingredients: In a large bowl, combine the yogurt and eggs until smooth. Image 1, 2, 3
- Add dry ingredients: Stir in the oats, seed mix, nuts, baking powder, and a pinch of salt. Mix until well combined. Image 1,4,5,6
- Transfer to a baking tin lined with baking paper. Image 7
- Bake for 45–55 minutes, or until the top is golden and a toothpick inserted in the center comes out clean.
- Cool on a wire rack before slicing. Image 8
