Lactose & Gluten-Free Yogurt Bread

This lactose- and gluten-free bread offers an alternative suitable for a variety of dietary needs. It is ideal for breakfast or as a side of main meals. The recipe is straightforward and requires minimal preparation, making it a practical choice for everyday baking.


Ingredients

  • 600 gr lactose-free yogurt (3.8% fat)
  • 3 eggs
  • 325 gr oats
  • 100 gr seed mix (pumpkin, sunflower, flax)
  • 50 gr nuts
  • ½ packet baking powder
  • Salt, to taste

Process:

  1. Preheat the oven to 180°C (356°F).
  2. Mix wet ingredients: In a large bowl, combine the yogurt and eggs until smooth. Image 1, 2, 3
  3. Add dry ingredients: Stir in the oats, seed mix, nuts, baking powder, and a pinch of salt. Mix until well combined. Image 1,4,5,6
  4. Transfer to a baking tin lined with baking paper. Image 7
  5. Bake for 45–55 minutes, or until the top is golden and a toothpick inserted in the center comes out clean.
