Vegetarian Lasagne with Pesto

Are you a Lasagne lover and you are vegetarian? This is the right dish for you. It does not take much time as the cream will take up to 10 min to be ready. The most tedious part is building the different layers, but I assure you: it is worth the effort.


Ingredients for Lasagne:

  • 1 package of Lasagne sheets
  • 1 jar of Pesto
  • 2 Mozzarella
  • 500 gr of Besciamella

Ingredients for Besciamella (white cream):

  • 500 ml Milk
  • 50 gr Flour
  • 50 gr of butter
  • Tsp Nutmeg
  • tsp salt

Process for Besciamella (white cream):

  1. Put the milk in a pot and let it boil.
  2. Add the butter and let it melt.
  3. Afterwards, add the flour while whisking so that you will not have flour bubbles. This passage will make your mixture become creamy and consistent. Let it cook for another 3 minutes. Now it’s ready to be put in the lasagne. If you let it cool down too much before putting it onto the Lasagne, it will become hard and sticky. Therefore, it won’t be easy to spread.

Process for Lasagne:

  1. Take a rectangular shaped baking tray. Put some oil on the bottom so that first lasagne sheets you will put won’t burn during the cooking process.
  2. Add a layer of lasagne sheets to cover the bottom of the tray.
  3. Then, add a layer of pesto.
  4. Now add a layer of besciamella. Make sure that it covers the entire surface of the sheets.
  5. Afterwards, cut some cubes of mozzarella and put them on top of the besciamella.
  6. Next, put other lasagne sheets on top. Then start from point to and continue this process until you have filled up the tray as much as you like. Image 1
  7. Once you are done with step 6, put the lasagne in the pre-heated oven at 180° for 20 min. You can cook it 15min normal oven + 5min grill mode. This last version will give a crispy consistency to the upper layer of the lasagne. Image 2

Variants:

  • Instead of pesto you could use a variety of ingredients. For example you could boil 500gr spinach and add them instead of pesto, or use Radicchio with some pine nuts.
  • You can substitute Mozzarella cheese with any other cheese you like. In Image 1 you can see that I have used Camembert instead of Mozzarella.
  • If any other ingredient pops up in your mind, go ahead and try it. Make sure to always have besciamella or a cream so that the lasagne plates will not burn.
