A fresh salad for summer evenings
During the warm summer evenings, I have little willingness to switch on the oven, the stove o even the microwave. Hence, I look for a fresh, easy and fast recipe for dinner. This salad is exactly what I was looking for to satisfy my palate.
Ingredients for 2 people
- 1 can of lentils (265/270 gr)
- 250 gr fresh cucumber
- 250 gr cherry tomatoes
- 60 gr feta cheese
- 1 tablespoon of pumpkin seeds
- 1 teaspoon Cumin
- Fresh mint
- Fresh parsley
- 1 lemon
- Olive oil and Salt
Process:
- Start by draining the lentils and put them in a bowl.
- Wash the cucumber and dice it. If you prefer you can peel it before slicing it. Then add it to the bowl.
- Wash the cherry tomatoes and cut them in half. Add them to the bowl.
- Dice the feta cheese and add it to the bowl.
- Wash the mint and parsley and cut it into small pieces.
- Squeeze the lemon juice and add it to the bowl together with oil and salt and the fresh herbs. For the best flavour I suggest to let the salad cool in the fridge for a couple of hours before eating it.
Variants:
- For more taste and consistency, you can also add 250 gr of red beet already boiled but not pickled.
- The pumpkin seeds can be substituted with sunflower seeds or walnuts.
