Gluten free seeds bread
This is a simple and healthy Nordic-inspired gluten-free bread. This bread is packed with seeds, nuts, and oats, and it is perfect for anyone looking for a nutritious and delicious option. It is perfect for breakfast or during your main meals.
Ingredients for 1 loaf
- 150 gr seeds mix
- 80 gr of chia or lino seeds grounded
- 50 gr of almonds/hazelnuts
- 150 gr of oats
- 30 gr of chia seeds
- 40 gr of physillum seeds
- 400 ml warm water
- 1 tablespoon of vinegar
- 1 teaspoon salt
Process:
- Preheat your oven to 180°C.
- In a large mixing bowl, mix all the dry ingredients. Stir well to ensure that all is evenly distributed. The ground chia or flax seeds and psyllium seeds will help bind the ingredients together, creating a dough-like consistency. Image 2 and 3
- Slowly add the water, vinegar, and salt to the dry mixture, stirring continuously until the mixture becomes thick and sticky. Image 4
- Let the mixture sit for about 10-15 minutes. This allows the chia or flax seeds and psyllium seeds to absorb the water and swell, which helps in binding the bread. Image 5
- Line a loaf pan with baking paper or lightly grease it to prevent sticking. Pour the mixture into the prepared loaf pan and smooth the top with a spatula. Image 6
- Place the pan in the preheated oven and bake for about 45-50 min, or until the bread is firm and golden brown on top.
- Remove the bread from the oven and let it cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely before slicing.
Once cooled, enjoy it with your favourite toppings for breakfast or as a side in the main dish.
