Pizza dough with fresh yeast
As all Italians, I love pizza. However, I am gluten intolerant. It took me a long time to figure out the best recipe for the dough with wholemeal flour and fresh yeast. This is because white flour behaves differently with the fresh yeast than wholewheat flour. I tried this recipe for 4 people and cooked it in normal oven with a pizza stone.
Ingredients for the dough (for 7 - 20 cm pizzas)
- 500 kg of wholewheat flour
- 300 ml water
- 30 ml oil
- 10 gr salt
- 10 gr fresh yeast
Process:
- Start by pouring the flour and the salt in a bowl. Mix them for few times with a fork.
- Create a hole in the middle and add the oil Image 1.
- Now measure the water and add the yeast and stir. The yeast should dissolve in the water.
- Once dissolved, you can add the water & yeast mixture in the flour where you previously poured the oil.
- Mix with a fork and then continue with your hands until forming a smooth ball Image 2.
- Let it rest for 4 hours Image 3.
- Divide the dough in 3 small balls and proceed with pizza preparation.
