Pudding Cake

An amazing cake without flour

As I am used to eat cold puddings, I experimented with this tiramisu inspired cake which has two different puddings. I wanted to make a cake, but I did not have all the ingredients. But I found puddings in the cupboard! Therefore, I decided to make an experiment! It is an easy and tasty dish to bring to a dinner :)


Ingredients:

  • 1 pack of vanilla pudding powder
  • 1 pack of chocolate pudding powder
  • 1 l of milk
  • 300 gr biscuits
Toppings:
  • Marzipan
  • Rocher

Process:

  1. Start with preparing one of the two puddings (I started with the chocolate one). Put 500ml of milk in a pot. Before boiling the milk, remove 6 tablespoons of the milk from the pot and put them in a bowl, add the pudding powder and mix. This will render the powder smooth and will prevent the formation of bubbles in the pudding. Let the milk boil, then add the pudding mixture in the pot while stirring it. Take it off the heat after about one minute, but keep stirring until the pudding reaches a creamy consistency.
  2. Pour the pudding into a round shaped tray and add a layer of biscuits on top. Let it sit for 1 hour, first at room temperature and then you can put it in the fridge.
  3. When the pudding is cold, start preparing the second pudding (in my case the vanilla pudding). Follow the same process as for the other one, described in the first bullet point of this recipe.
  4. Take out the round shaped tray from the fridge and pour the vanilla pudding on the top of the chocolate pudding and biscuit layer. Let it rest outside at room temperature for one hour and then put it in the fridge. You should be able to serve it after 3-4 hours from the preparation of the first pudding.
  5. As I had some marzipan leftover in the cupboard, I decided to roll the marzipan in a thin layer and add it on top of the chocolate pudding when I took it out from the round shape and turn it upside down.
  6. Finally, I added some marzipan balls and Ferrero Rocher on top of the marzipan layer for a nice look.


Variants:

  • You can use whichever flavor of pudding you prefer. Caramel, strawberry, white chocolate and you can play around with the combinations of tastes. As you can see in the second image, I used raspberries and honey as toppings.
  • Also, you can use many other toppings such as candies or sprinkles.
  • In the picture you can see another cake with raspberries and honey.
