Pumpkin Soup

An amazing warm soup

This is a simple, fast and easy winter dish. You can store it in the fridge so that you can eat it over several days.


  • 1 butternut pumpkin
  • 250 ml coconut milk
  • Salt
  • Pepper


  1. Peel and wash the pumpkin. Cut it in small pieces and let it boil in water until it reaches a soft consistency (30 min circa). The water should cover the pumpkin pieces. During the cooking time, the water should decrease by half of the initial volume. Add the salt while the pumpkin is cooking.Image 1
  2. Once the pumpkin is cooked, take it away from the stove. Now you can blend it together with the water left so that it reaches a creamy consistency.
  3. Now add the coconut milk and stir everything together. Let the soup cook for another 5/10 minutes.
  4. Add pepper and serve in a bowl.

Enjoy your meal!


  • You can serve the soup with “Crostini” which is toasted bread. They will give a nice touch to the cream.
  • You can serve the soup with cheese.
  • You can use different types of pumpkin. In the Image 2, you can see the ones that I used.
