Red lentils and carrot soup

A warm dish for a winter day

Do you like spiced food and soup? Maybe this recipe is the one that you are looking for. I got inspiration for this recipe while browsing the internet for Red lentils Dahli, an indian dish. Feel free to change the spices according to your own taste.


Ingredients (for 3 people)

  • 2 cups of lentils
  • 1 leek
  • 3 carrots
  • 800 ml coconut milk
  • 200 ml water
  • 200 ml tomato sauce
  • Salt
  • 3 teaspoons ginger
  • 3 teaspoons coriander
  • 3 teaspoons cumin
  • 3 teaspoons curcuma
  • 3 teaspoons paprika
  • 3 tablespoons of oil

Optional for decoration

  • Sunflower seeds
  • Cottage cheese

Process:

  1. After gathering all ingredients Image 1, the first step is to thinly slice the leek and carrots after washing them. Take the pan and after pouring the oil inside you can heat it up (medium heat). After 2 min, add the leek and let it cook for 4/5 minutes Image 2.
  2. Add the carrots and let cook for another 3 minutes Image 3. Then add 500 ml coconut milk and let it cook for 10 min. Constantly check the pan and if the milk reduces too much, add the rest of the milk and the water.
  3. Alternatively procced with adding the water and milk after 10 minutes. At this point you can also add all the spices, salt and the red lentils. Let it cook for 5 minutes and add the tomato sauce Image 4. Make sure to constantly stir all ingredients with a wooden spoon.
  4. You can now check the taste and the consistency of the food. Feel free to add water in case the mixture is too liquid. If you like it more creamy, let it cook for another 5 minutes.
  5. When you are satisfied with the result, you can serve the soup in a round deep plate and decorate the soup with sunflower seeds and some cottage cheese Image 5.
