A High-Protein, Gluten-Free Snack
These crispy lentil bites are a plant-based treat, perfect as a savory snack or a crunchy side. With just a handful of ingredients and minimal prep, they are perfect for an apero or an afternoon snack. Enjoy them with your favorite sauce on the side.
Ingredients
- 105 gr of dried red lentils (1/2 cup)
- 237 gr water (1 cup)
- 1/2 teaspoon Cumin
- 1/2 teaspoon Paprika
- 1/2 teaspoon Salt
Process:
- Soak red lentils in a cup of water for 2–3 hour. Image 1
- Drain the lentils, reserving a small amount of soaking water (half cup should be enough).
- Transfer lentils to a blender.Image 2
- Add cumin, paprika, salt, and a splash of reserved soaking water.
- Blend until smooth and creamy.
- Preheat oven to 180°C (356°F).
- Spread the lentil mixture evenly on a baking tray lined with parchment paper.Image 3
- Bake for 15 minutes until set.
- Remove from oven and cut into bite-sized pieces. I recommend a diagonal cut to get a nice shape.
- Return to oven and bake for another 10 minutes until crispy. You can serve them with home made guacamole or a fresh herbs yogurt sauce. Image 4
