Rhubarb Chocolate Cake

An unusual but tasty cake

Think of it as a giant brownie with a few drops of vanilla cream on top and flavorful rhubarb inside.


Ingredients for the dough:

  • 300g flour
  • 100g cocoa powder
  • 100g dark chocolate
  • 250g butter
  • 1 pkt baking powder (8g)
  • 250g sugar
  • 300ml milk
  • 4 eggs
  • 250g rhubarb

Ingredients for the cream:

  • 400g natural cream cheese
  • 2 pkts vanilla sugar
  • 2 eggs
  • 100g sugar

Process:

  1. Chop the chocolate into small pieces and slowly melt it together with the butter (either in a pot on the stove or in a bowl in the microwave).
  2. Whip the eggs, sugar and vanilla sugar in a bowl until the sugar has fully dissolved. Then, add the milk.
  3. In another bowl, mix the remaining dry ingredients (flour, baking powder, cocoa powder).
  4. Add the melted butter-chocolate mixture to the sugar-egg mixture and then (Bit-by-bit) add the dry mixture. Stir everything until it becomes an even, dark and heavy dough.
  5. Now you can prepare the cream in a bowl: simply mix the cream cheese with the sugar and eggs until you get a homogenous mass.
  6. Wash the rhubarb sticks and cut them into fine pieces.
  7. Spread out the dough on a baking tray with baking paper (it will be about 5cm high, depending on the size of your baking tray).
  8. Distribute the rhubarb pieces on top and gently press them into the dough (they don’t need to be fully covered).
  9. Take a spoon and put little drops of cream on top. The drops should not be too thick (otherwise the dough doesn’t cook evenly), but apart from that you can place and arrange them however you like.
  10. Finally, bake the cake at 175°C for 40-50 minutes in the oven.
