Semolina Cheesecake

A recipe for an exquisite Semolina Cheesecake

Do you know what semolina is? It is the hard grains left after the milling of flour, used in puddings and in pasta. In Italy it is used in many different dishes. For example, there are various types of pasta and focaccia which involve the use of Semolina. Moreover, in North Italy is used for a particular kind of dish similar to Gnocchi. However, this recipe involves Semolina in the filling of an exquisite cheesecake.

Ingredients:

For the dough:
  • 250 gr flour
  • 2 eggs
  • 60 gr butter
  • 100 gr sugar
For the filling:
  • 500 gr semolina pudding
  • 300 gr cream cheese (neutral flavor)
  • 2 eggs
  • 1 tbsp vanilla sugar
  • 3 tbsp lemon juice
  • 50 gr sugar
  • 500 gr peaches

Process:

Start with the preparation of the dough:

  1. Mix the flour and sugar in a bowl, so that the sugar can be integrated in the flour. In the meantime melt the butter in the microwave.
  2. Add the eggs and melted butter in the bowl where you previously mixed the sugar and the flour. Knead everything together until it becomes an even dough.
  3. When the even consistency of the dough is reached, prepare the round baking tray by covering it in butter and bread crumbs. This will prevent the dough to stick to the baking tray and will facilitate the removal of it after baking.
  4. Spread out the dough in the round baking tray as thinly as possible and also form an even skirt around the edges.

Second step, prepare the filling:

  1. Mix the semolina pudding with the cream cheese. If you do not have premade semolina pudding and you cannot find it in the supermarket, look at the tips section of this recipe and find out how you can make it yourself.
  2. Then add the eggs and mix again. While mixing, slowly add in the sugar and lemon juice.
  3. When the ingredients are all mixed, pour the filling onto the dough in the round baking tray.
  4. Finally, peel the peaches (if necessary), cut into quarters and put them in the raw cake.
  5. Bake for 40 minutes at 180°C. Let the cake cool down (put it in the fridge) before slicing and serving it.


Variants:

  • As most of the other recipes, you can vary the filling according to your taste. For example, instead of adding the peaches, you could add strawberries or any other kind of fruit you like. Just remember that they need to be added at the end of the process, right before putting the cake in the oven.

Ingredients:
  • 500 ml Milk
  • 10/12 Table spoons of Semolina
  • Sugar
Process:
  1. Put the milk in a pot and take to a boiling temperature.
  2. When the milk is boiling, add the semolina pudding and cook it for 2 min.
  3. Took the pot out from the heater and let it rest until it cools down.
