Yogurt Cake

Lemon flavoured cake with a touch of fresh berries

Do you like cheese cake? Then you are definitely going to love this recipe. It is a soft and gentle cake lemon flavoured with a touch of fresh taste. This cake is also suitable for people who are gluten allergic or intolerant.


Ingredients for the dough:

  • 500 gr of Greek yogurt
  • 3 eggs medium size
  • 75 gr starch
  • 100 gr sugar
  • 1 lemon zest
  • 1 lemon juice

Ingredients for the cream:

  • Berries
  • Mint

Process:

  1. Start by mixing the eggs, the sugar and lemon juice and zest together until it reaches a creamy consistency. You can have a look at the ingredients that I used in Image 1.
  2. Then add the starch and make sure to use a sieve so that no clots will form.
  3. Now you can pass on to add the yogurt and mix all the ingredients together until you reach a smooth cream Image 2.
  4. Pour the mixture in a baking tray Image 3. You should use a 20 cm diameter baking tray so that the cake will turn out to be of the right height. You should let the cake inside the oven until it turns gold on the top. Bake it for an hour at 200° for 50 minutes Image 4.
  5. Let it sit for at least two hours in the fridge and then put the toppings. As summer is usually hot, I used fresh berries and mint, but you can out other ingredients that you like. Let it rest in the fridge until the moment you need to served it Image 5.


Tips:

  • I would suggest to keep in mind that the topping ingredients need to go along well (taste-wise) with the lemon.
